Mr. Brezil Dias

Mr. Brezil Dias is a seasoned maritime professional with over 18 years of onboard experience in the cruise industry. Having progressed from junior supervisory roles to senior management positions, he brings a comprehensive understanding of shipboard operations, procedures, and regulatory compliance.

Currently serving as a Health and Hygiene Director onboard cruise vessels, Mr. Brezil has extensive expertise in public health standards, sanitation protocols, and operational compliance—critical areas in modern cruise operations.

Throughout his career, he has worked across multiple departments, gaining in-depth knowledge of hospitality services, housekeeping, galley operations, and overall onboard management systems. This cross-functional experience enables him to deliver practical, real-world insights into the expectations and challenges of working at sea.

At BlueAnchor Maritime Academy, Mr. Brezil leads with a vision to bridge the gap between recruitment and onboard readiness by providing structured, industry-aligned training. His focus is on preparing candidates not just for interviews, but for successful and compliant performance in a professional maritime environment.

Orientation & Safety

An essential introduction to the cruise line industry, life onboard, and critical maritime safety frameworks designed for all crew members before stepping onboard.

2 Weeks

Galley Utility Course

Theory and practical training for food production area cleaning standards, sanitation compliance, chemical usage, and onboard waste management systems.

Applicant Eligibility:

  • Fluency in verbal and written English
  • Minimum of 1 year work experience in a 4/5-star hospitality environment (in addition to 6 months industrial training)
  • Proven culinary experience, specifically within the Kitchen Stewarding department
Core Competencies: Cleaning and sanitizing, three-bucket system, three-sink system, chemical safety procedures, and correct use of PPE.
2 Weeks

Food & Beverage (F&B) Basics

Focused training for cruise ship restaurant and bar services, hospitality standards, onboard beverage programs, and guest communications.

Applicant Eligibility:

  • Fluency in verbal and written English
  • Minimum of 1 year work experience in a 4/5-star hospitality environment (in addition to 6 months industrial training)
  • A strong background in food and beverage, specifically within restaurant and bar environments
Core Competencies: Onboard service terminology, bar/table services, garnishes, napkin folding techniques, and language skills for guest interaction.
2 Weeks

Housekeeping Basics

Standard procedures and regulatory policies for maintaining premium passenger rooms and public areas onboard cruise ships.

Applicant Eligibility:

  • Fluency in verbal and written English
  • Minimum of 1 year work experience in a 4/5-star hospitality environment (in addition to 6 months industrial training)
  • Proven background in Housekeeping (e.g., Public Area Attendant or Room Attendant)
Core Competencies: Housekeeping policies and hierarchy, public area cleaning equipment usage, safety compliance, and room presentation standards.
3 Weeks

Advanced Culinary Course

Cruise-specific culinary techniques for high-volume, premium hot kitchen operations, following international menu standards.

Applicant Eligibility:

  • Fluency in verbal and written English
  • Minimum of 2 years work experience in a 4/5-star hospitality environment
  • A culinary background in high-volume hot kitchen operations with proficiency in knife skills, meats/seafood preparation, and inventory management
Core Competencies: Ingredient procurement, storage regulations, basic butchery, mother sauces from scratch, soups, pastas, main courses, grills, and salads.

Eligible candidates should meet the following requirements:

  • Fluency in spoken and written English.
  • Minimum 1 to 2 years of work experience in a 4-star or 5-star hotel/restaurant environment.
  • Background in Kitchen, Housekeeping, Food & Beverage Service, or Kitchen Stewarding.

Yes. A minimum of 1 to 2 years of experience (including job training) in a 4-star or 5-star hospitality environment is mandatory, as cruise lines require candidates with strong hospitality fundamentals and service standards.

Course Details

We offer specialized training programs including Orientation & Safety, Galley Utility, F&B Basics, Housekeeping Basics, and Advanced Culinary.

Our courses are designed to cover both theoretical principles (onboard safety, USPH/HACCP regulations) and intensive hands-on practical training that matches real shipboard operational environments.

The basics courses (Galley Utility, F&B Basics, Housekeeping Basics) are 2 weeks full-time. The Advanced Culinary course is 3 weeks full-time. All training is conducted in-person at our training facility.

During the training, we provide lunch as well as cookies and beverages during breaks. Accommodation is not included in the course fee, but we can provide a list of nearby, affordable lodging options for outstation candidates.

Placements

We provide full support, training, and guidance to prepare you for cruise line interviews. While our training is designed to significantly increase your chances of selection, we do not guarantee job placement, and enrollment in training is not a prerequisite for placement.
